Paleo Spicy Beef Fajitas

I try and stick to a general Paleo template when eating. Supplementing with Oats and White Rice when needing an extra boost. But, like most people, you can't force those you live with to do the same. I'm constantly trying to come up with ways to feed myself and my husband and keep us both happy!

Fajita night is a great way to accomplish this. Check out my recipe here for Paleo Guacamole and Salsa. Freshly made Salsa and Guacamole only takes a few minutes, uses most of the same ingredients and is worth the extra effort. It really adds taste and freshness to the dish. Not to mention they are both packed with healthy ingredients.

To make the Fajitas I mix some lean, beef mince (or can substituted with chicken breast chunks) in the following spice mix:

  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 1 tsp oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Once the meat is thoroughly cooked in a pan I add some sliced peppers, onion or any other vegetable of choice. Serve in a warm bowl with the following sides:

Paleo sides:
 - Sliced Lettuce

Non-Paleo Side
 - Flour Tortilla Wraps
 - Sour Cream
 - Grated Cheese
 - Fried spiced Rice
 - Refried beans

This way you can all enjoy the same dinner with you selecting which sides suit your current goals and lifestyle at this time. Everyone wins!

Lunch Time!: I typically make extra of everything and ensure I have enough for a tasty Fajita salad in work the next day. Just add some shredded lettuce to a jar, top with beef mix, cheese, salsa, guacamole and you've a quick and easy meal for the next day! Delish!

Any questions, just ask and I'd love to see some of your photos of recipes you've tried.

Tuesday's Change week 8 - Avocados

I used to HATE avocados. The taste, the texture even the way it felt on my hand I hated all of it!

But then I realised just how amazing they are for you. I started experimenting with recipes and flavours and how to eat it and now I try and have a couple a week. They are just so good for you and the taste and texture has really grown on me.

Check out this excellent article here on all the benefits they can have on your life.

This includes:

Super Brain Food

All Avocados are GMO free and the hard skin naturally protects them from pesticides, therefore, they have less chemicals sprayed during growth. Still buy Organic if the budget allows!

Can increase the absorption of other nutrients in your meal by up to 5 times.

Excellent for stroke prevention

Can reduce cholesterol by up to 17% in less than a week!

Protect your eyes and eyesight

High in fibre

High in good fats which protect the heart, lower blood pressure and reverse insulin resistance

Natural source of folic acid - integral for healthy pregnancy

Brimming with Vitamin E excellent for anti-ageing

So this weeks challenge is to eat more avocados! It really is that simple.

I've included some interesting recipes here to get your started.

Paleo Chocolate Mousse

Eat Clean Guacamole Bruschettas

Or alternatively you can:

Add half an avocado to your daily salad

Add an avocado to a soup to thicken it instead of milk or cream

Slice avocado on your bread with your eggs in the morning

Add guacamole to your burgers

Use guacamole as a dip for carrots and celery

The possibilities are endless! Try and eat 3-4 Avocados a week. You will not gain weight or make yourself fat. This is good fat, brain fuel and one of your 5 a day. You really can't eat enough!

Best of luck and keep changing!

Healthy Bruschettas:

Check out my recipe here for healthy Oat Bread. I used this bread and cut it into small slices, laid it under the grill and lightly toasted it.

I then spread on some guacamole and some homemade salsa (recipe here) to make a tasty, healthy tapas for guests or a Saturday night treat dinner! Healthy, tasty and home made. Delicious!
